Apple-cinnamon muffins
Ingredients
1 1/4 cup organic wheat flour
1/4 cup apple culinary powder
3/4 cup organic cane sugar
A pinch of salt
2 tsp. baking powder
3 tbsp. vegetable oil
1 cup vanilla yogurt
1 egg
1 tsp. pure vanilla extract
1/4 cup almond milk
30 g freeze-dried apple-cinnamon
120 g or ml water
Preparation
- Preheat oven to 375 °F. Butter muffin tins and set aside. If you’re using muffin parchment tulips, just place them directly in the muffin tin.
- In a bowl, combine flour, apple culinary powder, sugar, salt and baking powder. Set aside.
- In a separate bowl, combine vegetable oil, yogurt, almond milk, egg and pure vanilla extract. Pour over dry ingredients, then mix.
- Place the freeze-dried apple-cinnamon in a small bowl and add the water. Mix and leave to hydrate for a few minutes (2-3 minutes).
- Add the apples to the muffin mixture, fill the muffin cups and bake for 25 to 30 minutes. Allow to cool before serving.
Please note: You can play around and change the fruits as you like, or use frozen fruits. For frozen fruits, one cup is enough for the recipe. For freeze-dried fruits, you can use 30 g of fruit for 120 to 150 ml of water. This will make them soft and delicious for muffins. 😊
